Spagetti with Puttanesca Suace
The Bad Beginning
Servings: 4 servings
Cook Time: 15 minutes
Prep Time: 15 minutes

Ingrediants:
1 box (8 oz.) spaghetti or linguine
1 box (9 oz.) Frozen Italian Green Beans
1 jar (15 oz.) spaghetti sauce
1/2 cup sliced pitted ripe olives
1 can (2 oz.) anchovies, drained and mashed
1 tablespoon drained capers (optional)
1 teaspoon crushed red pepper flakes

Instructions: In large saucepan, cook spaghetti according to package directions. Add beans during last 5 minutes; drain and keep warm. Meanwhile, in medium saucepan, combine spaghetti sauce, olives, anchovies and capers. Bring to boil over high heat; reduce heat to medium and simmer 5 minutes. Season with pepper flakes to taste. Serve over spaghetti and beans.

Ingrediants:
1 egg white
3 cups confectioners' sugar
1 teaspoon peppermint extract

Instructions: In large bowl, whisk egg white until frothy, but not stiff. Stir in confectioners' sugar and peppermint extract. You may need to knead it with your hands. If you wish to add food coloring, knead it in, and keep kneading until the color is evenly distributed. Line a cookie sheet with parchment paper. Form the dough into small balls, place on cookie sheet and flatten slightly. Cover and let sit overnight in a cool, dry place, until set.

Coconut Cream Cake

Prep Time: 15 Minutes

Ingrediants:
1 (18.25 ounce) package white cake mix
3 eggs
1/3 cup vegetable oil
1 cup water
1/2 teaspoon coconut extract
1 (14 ounce) can coconut cream
1 (14 ounce) can sweetened condensed milk
1 cup heavy whipping cream
1 tablespoon white sugar
1 cup flaked coconut

Instructions: Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a large bowl, mix together cake mix, eggs, oil, water and coconut flavoring. Beat for 2 minutes and pour into 9x13 inch pan. Bake for 30 minutes, or until a toothpick inserted into the cake comes out clean. In a medium bowl, combine coconut cream with sweetened condensed milk and stir until smooth. When cake comes out of the oven, poke holes into it in even rows using a large fork or chopsticks. Pour milk mixture over, allowing it to soak into the cake. Refrigerate for several hours or overnight. In a large bowl, whisk cream until soft peaks form. Add sugar and continue whipping until stiff. Spread over cooled cake. Sprinkle top with flaked coconut.

Olive Oil

Instructions: Combine the sliced mango, black beans, and chopped celery in a bowl. While tossing the salad, add black pepper, lime juice, and olive oil to taste. Serve chilled. Optional: Substitute the chopped celery with hearts of palm.

Chilled Cucumber Soup

Servings: 8 servings
Cook Time: 29 Minutes

Ingrediants:
2 cups cucumber - peeled, seeded and shredded
2 tablespoons grated onion
2 (10.75 ounce) cans condensed cream of celery soup
2 cups cottage cheese
2 cups buttermilk
1 pinch seasoning salt

Instructions: Grate cucumber and onion, and strain out liquid. In a blender, mix cream of celery soup, buttermilk, cucumber and onion mixture. Blend, add one cup of cottage cheese and blend again. Since the blender may not hold all of the ingredients, pour half of blended mixture into a bowl. Add remaining cottage cheese and blend. Combine all soup into one bowl and stir in seasoning salt. Refrigerate until ready to serve.
